Pear Walnut Tart
Ingredients
- For the tart
- 1 fresh Puff pastry dough (round about (30cm)
- 100 grams Walnut
- 50 grams Acacia honey
- ½ Orange (zest)
- 1 egg
- For the syrup
- 500 milliliters water
- 500 grams sugar
- 1 lemon
- 2 Cinnamon stick
- ½ Vanilla bean
- 1 Star anise
- 3 Cardamom
- 8 small Pear
Preparation steps
Mix water with sugar and all the spices, bring to a boil. Peel pears, halve, core and add into the boiling syrup for 5 minutes. Cook until soft, then let cool.
Use a star tool and cut stars out of puff pastry. Place small stars around the puff pastry then form the edge with stars. Brush egg white over star edge then brush entire pastry with egg yolk. Bake pastry until golden brown about 15 -20 minutes at 200°C (approximately 400°F).
Heat butter, pour 100ml (approximately 1/2 cup) syrup and sugar in a pan, let it boil until it starts to caramelize (will brown), gently add well-drained pear halves with the cut edge on the bottom of the pan and let caramelize.
Brush with honey and 2/3 of chopped walnuts, spread on the bottom, add pear halves with the round part down, garnish with walnuts, star anise and orange zest. Serve lukewarm.
