Peel and quarter the pears. Remove the core and finely dice.
Add the diced pears, lemon juice, sugar, spices, wine, and 400 ml (approximately 13 ounces) of water to a pot. Bring to a simmer over medium heat, and cook for 10 minutes.
Fill the prepared jars to the brim with the compote. Seal tightly, cool completely, and store in a dark, cool place.
