150 grams chopped Walnut
100 grams ground Walnut
250 grams Pastry flour
150 grams powdered sugar
120 milliliters vegetable oil
1 pkg Baking powder
½ tsp ground ginger
3 eggs
1 lemon (juice)
1 pinch salt
For garnish
powdered sugar
2 Tbsps lemon juice

Preparation steps

Preheat the oven to 200°C (approximately 400°F). Peel pears, quarter lengthwise, cut out cores, then cut into small pieces. Toss the pears immediately with lemon juice.

Stir together flour, ground walnuts, baking powder, salt, and ginger.

In a second bowl mix together oil, sugar and eggs until creamy. Add the flour mixture and stir until combined. Fold in the chopped nuts and drained pear pieces. Place in a buttered and floured springform pan.

Bake for about 1 hour. Remove from the oven and allow to cool for about 15 minutes in the pan. Unmold the cake and cool completely on a wire rack. To serve, drizzle the cake with lemon juice and dust with powdered sugar. Serve with whipped cream if desired.
