½ Cucumber (peeled)
2 red Bell pepper (rinsed; trimmed and cut into thin strips)
1 Red onion (peeled and thinly sliced)
1 chili pepper (rinsed; trimmed and finely chopped)
1 tsp freshly grated ginger (freshly grated)
1 Tbsp honey
4 Tbsps Lime juice
light soy sauce (to taste)
½ cup shelled, roasted Peanuts (finely chopped)
fresh cilantro washed (for garnish)
2 fresh Limes (cut in half)

1 Pot, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Wooden spoon, 1 Peeler, 1 Slotted spatula, 1 Meat mallet, 1 Grill pan, 1 Lid, 1 Aluminum foil

Preparation steps

Cook noodles according to package instructions. Drain and cut to desired length with clean kitchen scissors.

Cut the cucumber in half lengthwise and remove the seeds; cut into thin slices. In a large bowl, combine the cooked noodles, cucumber, peppers, onion, and chili pepper.
3.
In a separate small bowl, mix the ginger, honey, lime juice and 2 to 3 tablespoons of soy sauce. Drizzle over noodles mixture and toss to incorporate.
4.
Divide between 4 serving bowls. Garnish with peanuts and cilantro. Serve with fresh limes.
