- 8 ozs cellophane noodle
- ½ Cucumber (peeled)
- 2 red Bell pepper (rinsed; trimmed and cut into thin strips)
- 1 Red onion (peeled and thinly sliced)
- 1 chili pepper (rinsed; trimmed and finely chopped)
- 1 tsp freshly grated ginger (freshly grated)
- 1 Tbsp honey
- 4 Tbsps Lime juice
- light soy sauce (to taste)
- ½ cup shelled, roasted Peanuts (finely chopped)
- fresh cilantro washed (for garnish)
- 2 fresh Limes (cut in half)

Preparation steps

Cook noodles according to package instructions. Drain and cut to desired length with clean kitchen scissors.

Cut the cucumber in half lengthwise and remove the seeds; cut into thin slices. In a large bowl, combine the cooked noodles, cucumber, peppers, onion, and chili pepper.

In a separate small bowl, mix the ginger, honey, lime juice and 2 to 3 tablespoons of soy sauce. Drizzle over noodles mixture and toss to incorporate.
4.
Divide between 4 serving bowls. Garnish with peanuts and cilantro. Serve with fresh limes.
