- For the noodle salad
- 300 grams Glass noodles
- salt
- 2 carrots
- 3 scallions
- 1 Tbsp soybean oil
- 2 Tbsps unsalted Peanuts
- 3 Tbsps Peanut oil
- 2 Tbsps light soy sauce
- peppers
- 400 grams cooked shrimp (peeled and deveined)
- For the garnish
- cilantro
Preparation steps

For the noodle salad, cook rice noodles according to package directions, drain, rinse with cold water and drain again. Peel carrots and cut into fine julienne strips. Rinse scallions, trim and cut into thin rings.

In a pan heat 1 tablespoon of oil and sauté onion rings with carrot strips for about 2 minutes. Remove onion and carrot from pan and mix in a bowl with noodles.

Toast peanuts in a dry skillet until golden brown, remove and allow to cool slightly.

Mix oil in a bowl with soy sauce and season with pepper. Add vinaigrette, prawns and nuts to noodle mixture. Serve immediately garnished with cilantro.
