Rinse the peaches, halve, pit and dice. Transfer to a blender, add the water and sugar and purée until smooth. Rinse the lemon, finely grate the zest and squeeze the juice. Transfer to a saucepan along with the peach mixture and thyme and bring to a boil, stirring. Set aside and let stand for 10 minutes. Strain through a sieve to remove any solid ingredients.

Let the liquid cool then mix with the Prosecco. Distribute between serving glasses. Add ice cubes and serve garnished with peach slices.
