600 grams fresh Peas (Or frozen and thawed)
1 onion
100 milliliters Whipped cream
30 grams butter
500 milliliters Vegetable broth
1 handful mint
8 Langostinos
2 Tbsps olive oil
salt
freshly ground peppers

Preparation steps

1.

Cook the peas for about 5 minutes in a little salted water, then immediately remove and drain into ice water. Peel and chop the onion, rinse the mint, shake dry and chop the leaves. Set some leaves aside for garnish.

Butter a saucepan and sauté the onion cubes in it. Pour in the cream and season with salt and pepper. Fill with the broth and bring to a boil.

Purée the contents of the pot finely along with the peas and mint in a blender.

4.

Rinse and peel the langostinos. Cook in hot oil about 1 minute, while seasoning with salt and pepper. Drain on paper towels.

5.

Heat the soup briefly, but do not allow to boil. Serve in cups, distribute the langostinos on the soup and garnish with the remaining mint.
