- 2 shallots
- 1 Tbsp butter
- 500 grams Peas
- 600 milliliters vegetable stock
- ½ bunch mint
- ½ bunch Basil
- 100 grams Whipped cream
- 50 grams Crème fraiche
- salt
- peppers
- 2 Tbsps lemon juice
- Tabasco sauce (to taste)
- Basil
- 75 grams whipped cream (for garnish)

Preparation steps

Peel the shallots, chop and sauté in butter. Add the peas and continue cooking. Pour in the vegetable stock and simmer for 5 minutes.

Remove from the heat, stir in the mint and basil along with the sour cream and crème fraiche and puree in a blender. Pour through a sieve and season with salt, pepper, lemon juice and hot sauce. Divide among bowls and garnish with a dollop of whipped cream and basil strips.
