14 ozs frozen Puff pastry (defrosted)
flour (for the work surface)
5 cups fresh, young Spinach
2 cups cherry Tomatoes
1.333 cups Cheddar cheese (diced)
Nutmeg
1 egg (separated, egg whites beaten)

Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with greaseproof paper.

Roll out the pastry onto a floured work surface and cut out 16 circles (12 cm in diameter).

Mix together the spinach, tomatoes and the cheese and season with salt, ground black pepper and nutmeg. Place the mixture in the middle of 8 pastry circles. Brushed the edges with the egg white and place the remaining circles on top. Press the edges together all the way around using a fork.
4.
Place the pies on the prepared baking tray and brush with the egg yolk. Bake for 30-35 min until golden brown. Remove from the oven and serve immediately.
