400 grams Spaghetti

100 grams Walnut
2 Tbsps olive oil
1 garlic clove
100 milliliters dry white wine
100 milliliters Vegetable broth
100 milliliters Whipped cream
100 grams Gruyere
freshly ground peppers
172 handfuls Arugula
4 Tbsps freshly grated Parmesan

Preparation steps

1.

Cook spaghetti in plenty of boiling salted water until al dente.

Heat oil in a pan and toast walnuts for a few minutes. Peel garlic and squeeze through a garlic press. Add to walnuts and saute for a few seconds. Add white wine, broth and cream, whisk well. Cut cheese coarsely and add to the sauce. Season with salt and pepper. Rinse arugula and cut into fine strips. Drain pasta and place into sauce pan, toss well. Add arugula and mix well. Arrange on four plates and sprinkle with grated Parmesan. Serve.
