250 grams sliced Bacon
400 grams Tagliatelle
2 Tomatoes
1 Tbsp olive oil
white wine
2 Tbsps Crème fraiche
80 grams freshly grated Parmesan
200 grams Spinach
salt
freshly ground pepper

Preparation steps

1.

Cook the pasta in plenty of boiling salted water until al dente.

2.

Cut the bacon into strips.

3.

Blanch the tomatoes, peel, remove the seeds and cut into cubes.

4.

Rinse, trim and drain the spinach.

5.

Fry the bacon in a skillet until crisp, then add the olive oil and diced tomatoes and sauté for about 3 minutes. Remove and keep warm.

6.

Deglaze with wine, stir in the creme fraiche, Parmesan and spinach.

7.

Mix in the dripping wet pasta, season with salt and pepper and serve.
