- 500 grams Penne (wholemeal pasta if desired)
- salt
- 150 grams dried Tomatoes (in oil)
- 100 grams Arugula
- 1 garlic clove
- 40 grams Pine nuts
- 2 Tbsps Tomato paste
- 100 milliliters dry white wine
- peppers (freshly ground)
- Red pepper flakes
- planed Cheese (for sprinkling; Pecorino or Parmesan)

Preparation steps
1.
Cook the penne pasta in salted water until al dente. Drain and keep some cooking water aside.
Drain the dried tomatoes and collect the oil. Chop the tomatoes coarsely. Rinse the arugula, trim, shake dry and chop coarsely.

Peel garlic and chop finely.
Heat the collected tomato oil in a pan and saute the garlic together with the dried tomatoes and pine nuts. Add in the arugula, tomato paste and dry white wine. Saute on high heat and add in the cooked penne pasta with a little pasta water.
3.
Add in the red pepper flakes, season with salt and pepper, and serve sprinkled with cheese.
