- 400 grams Penne
- 500 grams Cherry tomatoes
- 1 onion
- 1 garlic clove
- salt
- freshly ground peppers
- 3 Tbsps olive oil
- 50 grams grated Parmesan
- fresh rosemary (for garnish)
- 40 grams Parmesan (whole piece)

Preparation steps

Rinse tomatoes. Remove seeds from half of the tomatoes and cut into cubes. Peel and finely chop onions and garlic. In a pot, sauté onions and garlic in hot oil. Add diced tomatoes and season well with salt and pepper. Cook about 10 minutes over medium heat. Meanwhile, cook pasta in plenty of salted boiling water until al dente. Drain.

Cut remaining tomatoes into eighths. Add to sauce and heat until warmed through. Season to taste. Mix sauce with pasta and grated Parmesan cheese. Divide among plates and serve with shaved Parmesan (use a potato peeler or truffle slicer), if desired. Serve garnished with rosemary.
