- 400 grams Spaghetti
- salt
- 3 garlic cloves
- ½ bunch Chives
- 2 Tbsps olive oil
- 350 milliliters Whipped cream (at least 30% fat content)
- freshly ground peppers
- Nutmeg
- 50 grams grated Parmesan
- 300 grams Smoked eel
- Leeks (for garnish)
Preparation steps

Cook the spaghetti in boiling salted water until al dente. Peel the garlic and chop finely. Rinse the chives, shake dry and cut into small rings.

In a pan, heat the oil and sauté the garlic for 1-2 minutes, until translucent. Add the chives and pour in the cream. Season with salt, pepper, and nutmeg. Simmer for about 5 minutes, add the drained pasta and Parmesan and toss to coat.

Cut the eel into thin strips and arrange on top of the noodles on warmed plates. Serve garnished with chive stalks.
