100 grams Parmesan (freshly grated)
400 grams Tagliatelle
100 grams smoked Bacon (such as pancetta)
1 Tbsp olive oil
1 garlic clove
parsley (for garnish)

Preparation steps

1.

Break eggs into a large bowl, stir in parsley, salt, pepper and 60 grams (approximately 2 ounces) Parmesan.

Bring a pot of salted water to a boil and cook pasta following package directions until al dente. Cut bacon into strips and add to a pan with a little oil. Cook bacon over medium heat. Peel garlic and press into pan using a garlic press.

3.

Drain pasta and add to the pan with bacon. Stir briefly, then add egg mixture and mix well. Immediately transfer to a bowl and sprinkle with remaining Parmesan cheese and serve garnished with parsley.
