- 400 grams Beef fillet (ready to cook)
- 700 grams Tomatoes
- 4 sprigs Sage
- 400 grams Taglierini
- salt
- 2 garlic cloves
- olive oil
- 100 milliliters dry white wine
- freshly ground peppers
- 60 grams freshly grated Parmesan

Preparation steps
1.
Rinse beef, pat dry and wrap tightly in plastic wrap and then in aluminum foil. Freeze for 4 hours.

In the meantime, blanch tomatoes. Peel, quarter, core and dice. Rinse sage, shake dry and remove leaves.

Cook pasta in boiling salted water until al dente.

Peel and mince garlic. Heat 2 tablespoons oil in a pan and cook garlic. Add tomatoes, sage and wine. Simmer for 2-3 minutes and season with salt and pepper. Drain pasta and add to tomato mixture.
5.
Remove beef from freezer and discard plastic and foil. Use a slicer to cut thin pieces of beef. Arrange on a plate, slightly overlapping. Serve with pasta garnished with freshly grated parmesan.
