Preparation steps

Juice the lime. Rinse the asparagus and remove the woody ends. Boil the asparagus in salted water with 1 tablespoon of lime juice for 12 minutes. Cook the noodles according to the package in salted water until al dente. Remove the asparagus from the broth, drain and cut into 3 cm (approximately 1 inch) pieces.

Place half the stems with the lime juice, olive oil, and half the Parmesan cheese in a blender and puree. Season with salt and pepper. Drain the pasta and mix with the asparagus.

To serve: Transfer to pasta to plates. Distribute the asparagus puree over the pasta and sprinkle with the remaining Parmesan.
