Pasta Tubes with Spicy Sauce
- 10 cups Rigatoni
- olive oil (extra virgin)
- 2 garlic cloves (finely chopped)
- 2 chili peppers (finely chopped)
- 12 cups ripe tomatoes (peeled and diced)
- 2 Tbsps parsley (finely chopped)
- pecorino romano (grated)

Cook the pasta in plenty of salted boiling water until al dente.
Heat 3 tbsp oil in a pan and fry the garlic and chilli. Add the tomatoes and simmer on a medium heat for 5 minutes. Season with salt.
Drain the pasta and add it to the tomato sauce, mix well and turn up the heat for a few minutes. Remove the pan from the heat and stir in the parsley. Sprinkle with Pecorino and serve immediately. Garnish with basil if desired.
