4 Chicken breasts (about 120 grams)

3 Tbsps olive oil
1 tsp Curry powder
1 Tbsp Tomato paste
100 milliliters dry white wine
400 grams Fusilli
2 Tbsps freshly chopped Basil

Preparation steps

Poach the tomatoes then peel, quarter, core and dice. Rinse the bell peppers, cut in half, clean out the seeds and dice. Peel the onion and garlic and chop finely. Rinse the chicken breasts, pat dry and season with salt and pepper. Heat 2 tablespoons oil in a pan and sear both sides of chicken until golden brown. Remove from the pan and in the remaining oil cook the garlic and onion until translucent. Briefly sauté the curry and the tomato paste and deglaze with wine. Add the tomatoes, peppers and chicken to the pan, and let simmer for about 10 minutes.

Boil pasta in salted water until al dente according to package instructions.

Remove the chicken from the sauce and cut into slices. Season the sauce and toss the basil into the drained pasta. Distribute pasta among plates and serve chicken on top of pasta.

If desired, serve with a baby chard salad.
