Paleo Parma Ham Wrapped Cod
Heat the oven to 200ºC (180º fan) 400ºF, gas 6.
Place the tomatoes, onion and thyme in a roasting tine and drizzle over the olive oil. Season with a little sea salt and black pepper.
Wrap the cod pieces in the ham slices and place on top of the tomato mixture.
Place the roasting tin in the oven and cook for 15-20 minutes or until the fish is cooked through.
