400 grams Cherry tomatoes
1 Cucumber
6 scallions
4 sprigs thyme
1 Tbsp lemon juice
2 Tbsps white balsamic vinegar
1 pinch sugar

Preparation steps

1.

Cut the white bread into bite-sized cubes and fry with 2 tablespoons hot oil in a skillet until crispy. Drain on paper towels.

Rinse the tomatoes and cut in halves or quarters. Peel and cut the cucumber into rings. Rinse the spring onions and cut diagonally into rings. Rinse the thyme, shake dry, and pluck. Whisk the lemon juice with the remaining oil, vinegar, and sugar. Season with salt and pepper. 

Toss all the prepared salad ingredients in a bowl. Drizzle with the dressing.

To serve: Mix everything together well and serve immediately.
