100 grams Spinach

2 Tbsps melted butter
250 grams Pastry flour
450 milliliters milk
1 pinch Nutmeg
2 eggs
80 grams cooked ham (sliced)
vegetable oil (for frying)
80 grams Sour cream

Preparation steps

1.

Rinse and spin dry spinach. Set some leaves aside for garnishing. Blanch the rest in  boiling salted water, rinse in cold water and squeeze. Chop finely and puree with butter in a blender.

Whisk flour with milk, nutmeg and a pinch of salt until smooth. Add eggs and spinach and let batter rest for about 10 minutes.

Slice ham into small pieces.

Heat oil in a pan and ladle some batter into it. Cook for about 1 minute per side or until golden brown, flip and cook the other side. Prepare 8 thin pancakes in the same manner. Keep pancakes warm in preheated oven at 70°C (approximately 125°F) until all pancakes are ready.

Heat 1 tablespoon of oil in a pan and cook ham until crispy.

Arrange pancakes on plates and fold, if desired. Top with dollop of sour cream and ham. Finely cut reserved spinach leaves and garnish pancakes with them. Serve.
