- ¼ cup olive oil
- 1 Tbsp white wine vinegar
- 12 Oyster (freshly shucked and cleaned of any grit)
- 1 Leek (green section only, thinly sliced)
- 4 Tbsps Trout roe
Preparation steps
1.
Whisk together the olive oil and vinegar to make a simple dressing and season to taste with salt and pepper.
2.
Arrange three oysters on each serving plate and dress with some of the dressing.
3.
Arrange the sliced leek on top then spoon over a little caviar. Serve immediately.
