Blinis with Caviar
Separate the eggs. Mix the flour with the buckwheat flour. Dissolve the yeast in the milk and stir, along with the melted butter, egg yolk and salt, into the flour. Cover and leave to rest in a warm place.
Whisk the egg whites until stiff and fold in before cooking the batter.
Heat some butter in a pan. Place tablespoon sized portions of batter into the pan and fry on both sides until golden brown. Keep warm.
Serve hot, with a spoon of salmon caviar, a dollop of sour cream and garnished with dill.
