2 Tbsps lemon juice
1 Tbsp freshly chopped thyme
2 Tbsps olive oil

2 Tbsps liquid honey
1 Tbsp butter

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Peel the carrot, trim, leave some greenery as desired and cut in half lengthwise, or leave whole, depending on size. Mix with lemon juice, thyme, oil, season with salt and pepper and spread on a baking sheet. Bake about 20 minutes, or until al dente. During the last 5-10 minutes drizzle with the honey and the butter, stir and allow to caramelize.
