4 garlic cloves
3 Tbsps olive oil
3 small Zucchini
Bell pepper (2 each red and yellow)
600 grams starchy potatoes
2 sprigs rosemary
salt
freshly ground peppers

Preparation steps

1.

Peel onions, cut in half lengthwise and cut into wedges. Peel garlic and cut into slices. Mix onions and garlic with oil in a bowl. Rinse zucchini, trim and cut into thick slices. Rinse bell peppers, cut in half, remove seeds and ribs and cut into large pieces.

Peel potatoes and cut into quarters or eighths. Add zucchini, bell peppers and potatoes to the bowl and mix well. Arrange vegetables on a baking sheet and bake in a preheated 200°C (approximately 400°F) for about 15-20 minutes. Stir vegetables and sprinkle with rosemary.

3.

Bake for another 15 minutes and season with salt, pepper and rosemary. Stir potatoes and vegetables again and bake for another 15 minutes until lightly browned. Remove from the pan and season with salt and pepper. Serve as a side dish.
