- ½ cube Yeast (21 grams) (approximately 3/4 ounce)
- 20 grams Lard (or butter)
- 1 tsp salt
- 450 grams Pastry flour
- 600 grams onions
- 2 garlic cloves
- 2 sprigs thyme
- 2 Tbsps olive oil
- 1 bay leaf
- salt
- freshly ground peppers
- Pastry flour (for dusting)
- 6 Anchovy fillet

Preparation steps
1.
Dissolve the yeast, lard and salt in 250 ml (approximately 1 cup) lukewarm water. Knead into the flour until the dough comes away from the sides of the bowl. If necessary, add more water or flour. Cover and let rise for 45 minutes in a warm place.

Meanwhile, peel the onions and cut into strips. Peel the garlic and chop. Pluck the leaves from the thyme. Preheat the oven 220°C (approximately 425°F) convection.

Heat the oil in a large frying pan, sweat the onions and garlic until translucent with the bay leaf and thyme and season with salt and pepper. Roll out the dough on a lightly floured work surface then use to line a baking sheet.
4.
Spread the onion mixture over the dough and top with the anchovies. Bake for about 25 minutes.
