80 grams baby Spinach
80 grams Hazelnuts (peeled)
2 shallots
2 garlic cloves
10 eggs
50 milliliters Whipped cream
80 grams grated Cheese (such as Gruyère)
salt

Nutmeg
2 Tbsps vegetable oil

Preparation steps

Preheat the broiler.

Rinse and trim the spinach, then dry thoroughly. Toast the hazelnuts in a dry ovenproof pan. Remove from the heat, let cool, then coarsely chop. Peel and finely dice the shallots and garlic. Beat the eggs with the cream and the cheese, and season to taste with salt, pepper, and nutmeg.

Heat 1-2 teaspoons of oil in a pan. Divide the ingredients into quarters. Sauté the shallots and garlic until translucent. Pour in 1/4 of the eggs, and sprinkle with the spinach and nuts. Place under the broiler for 5-6 minutes, until golden brown. Remove from the oven and keep warm. Repeat the process until all the ingredients have been used.
