- 4 garlic cloves
- 120 grams unsalted Shelled pistachio
- 1 Tbsp green peppercorns (crushed)
- 2 Tbsps lemon juice
- 150 grams black Olives (pitted)
- 150 grams Parmesan (grated)
- 100 milliliters olive oil
- salt (to taste)
Preparation steps

Peel the garlic and place in a food processor with the pistachios, pepper, lemon juice, olives, and parmesan. Process for 30 seconds in a food processor. Alternatively, you can crush the ingredients well in a mortar.

Gradually incorporate the olive oil, and mix until the pesto has your desired consistency. Season to taste with salt. Fill the prepared jars to the brim with the pesto, then cover with a layer of oil. Seal tightly and store in the refrigerator.
