2 Tbsps Dijon mustard
1 pinch ground Cumin
1 pinch ground cilantro
freshly ground Black pepper (to taste)
1 Pork tenderloin (approx. 450 g | 1 lb)
2 tsps Canola oil
¼ cup Mayonnaise
2 tsps diced, canned chipotle chili peppers (in adobo sauce)
1 tsp fresh Lime juice
½ tsp Orange zest
4 crusty, sandwich Rolls (sliced)

Preparation steps

Preheat oven to 350º F.

In a small bowl, combine the marmalade, mustard, cumin, coriander and pepper.

Rinse the pork tenderloin under cold running water and pat dry with absorbent paper towels. Rub the pork with the marmalade and spice mixture.

Heat the canola oil over medium-high heat in a large skillet. Once hot, add the pork loin and sear it on all sides. Transfer the pork loin to a roasting pan and roast until a meat thermometer inserted into the center of the loin reads 160º F, about 30 to 45 minutes. Transfer the pork loin to a cutting board, let rest for 10 minutes. Using a sharp knife, cut into 1/4-inch thick slices. Meat can be stored in the refrigerator until ready to use.

In a small bowl, combine mayonnaise, chipotle peppers, lime juice, and orange zest. Spread both halves of the sandwich roll with the mayonnaise mixture. Layer the pork slices on the bottom layer of the roll and cover with the top half of roll. Slice each roll in half and serve.
