Oatmeal Pastry Rolls

- 400 grams Pastry flour
- ½ cube Yeast
- 1 tsp sugar
- 125 milliliters lukewarm water
- 50 grams Oats
- 1 tsp salt
- 1 egg
- 100 grams Yogurt (0.1% fat)
- 1 Tbsp soft butter

- Pastry flour (to work)
- Parchment paper (for the baking sheet)
- 1 tsp salt (to garnish)
- Poppy seeds (to garnish)
Preparation steps
Sift the flour into a bowl. Make a well in the center. Crumble the yeast into the well and mix with the sugar and a little of the lukewarm water. Dust with flour, cover, and let rise for 15 minutes.
Knead the remaining water with the oatmeal, salt, egg, yogurt, and butter. Cover and let sit in a warm place for 30 minutes. Combine the yeasted dough with the oatmeal dough until smooth.
Knead the dough on a floured surface. Divide into 8 equal portions. Roll each portion into a 40 cm (approximately 16 inches). Roll into a spiral and place on a parchment-lined baking tray. Cover and let rest for 20 minutes. Preheat the oven to 200°C (approximately 400°F). Mix 1/2 cup of water with 1 teaspoon of salt.
Brush each roll with the salt water and sprinkle with poppy seeds. Bake in the preheated oven for 15 minutes. Remove from the oven and let cool on the baking sheet.
Serve once cooled.
