- 3 ⅓ cups Peaches
- ½ unwaxed lemon (zest and juice)
- 4 tsps Peach liqueur
- 2 Tbsps honey
- ½ cup Almond flour
- ½ cup hazelnut flour
- ½ cup brown sugar
- ⅓ cup all-purpose flour
- ½ cup porridge oats
- ½ cup butter (scant)
- ½ tsp ground cinnamon

Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and butter four small tins or ramekins (approx. 12 cm in diameter).

Cut a cross in the base of each peach and place them in a bowl. Pour over boiling water and wait for around 1 minute until the skin begins to loosen. Take out of the water and peel. Remove the stones and roughly dice the flesh. Divide between the tins.

Mix together the lemon zest and juice with the liqueur and honey. Drizzle over the peaches and mix through.

Put the nuts, sugar, flour, oats, butter and cinnamon in a bowl. Rub together by hand to form a breadcrumb-like texture. Sprinkle over the peaches. Bake in the oven for around 20 minutes until golden.
5.
Remove from the oven and serve with ice cream if desired.
