- For the cherry filling
- 1 jar Cherries
- ¼ tsp cinnamon
- ¼ cup sugar
- ¼ cup dry Red wine
- 1 Tbsp Corn starch
- For the dough
- 2 eggs
- ¼ cup sugar
- 1 Tbsp Vanilla sugar
- 3 Tbsps soft butter
- lemon zest
- ⅓ cup Pecan
- ½ cup flour
- 1 tsp Baking powder
- ½ cup Pecan (roughly chopped)

Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Heat the cherries and the juice in a pot and season with cinnamon and sugar. Mix together the red wine and the cornflour and stir into the cherry mixture. Bring to the boil, then remove from the heat and put a spoonful of the mixture into four ramekins.
3.
To make the dough mix together the eggs, sugar and vanilla sugar until white and creamy. Add the butter, a pinch of lemon zest, the ground nuts, flour and baking powder and stir into a smooth dough.
4.
Spoon the dough into the ramekins, sprinkle with the chopped nuts and bake for 25 minutes until golden brown. Remove from the oven and serve sprinkled with sugar.
