- For the dough
- ½ cup softened butter
- ⅔ cup Maple syrup
- 1 egg
- 1 ⅔ cups all-purpose flour
- ½ cup ground Walnut
- 1 Tbsp Corn starch
- ½ tsp Baking powder
- ⅔ cup Buttermilk
- For the filling
- 1 cup white chocolate
- 2 Tbsps cream
- 1 Tbsp Maple syrup
- ¼ cup chilled butter (in chunks)
- ½ cup Walnut (finely chopped)

Preparation steps

Preheat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and line a baking tray with greaseproof paper.

Beat the butter with the maple syrup until creamy, then beat in the egg. Mix the flour with the walnuts, cornflour and baking powder and add to the butter and egg mixture, alternating with the buttermilk. Use a spoon to make 24 mounds of dough on the baking tray and bake in the oven for approx. 15 minutes. Remove from the tray and leave to cool completely.

For the filling, melt the white chocolate with the cream in a bowl over hot water. Take off the heat and beat in the syrup and chilled butter, then leave to cool until firm but still creamy. Fold in the nuts and spread or pipe the cream over the underside of half of the biscuits. Sandwich with the remaining biscuits.
