- For the base
- 1 ⅔ cups Biscuit (e. g. digestives or chocolate biscuits)
- ½ cup butter
- 2 Tbsps brown sugar
- For the filling
- 3 ½ cups cream cheese
- 1 cup Sour cream
- 2 ½ Tbsps Corn starch
- ½ cup sugar
- 4 eggs
- vanilla extract
- lemon zest (from an unwaxed lemon)

Preparation steps

Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4.

Crumble the biscuits to a medium crumb using a food processor. Melt the butter and mix with the biscuit crumbs, together with the sugar. Press the mixture into the base of the tin, forming an edge. Put in the refrigerator to chill.

For the filling, mix together the cream cheese, sour cream, cornflour, sugar, eggs, a pinch of salt, a few drops of vanilla extract and a pinch of lemon zest using a whisk. Tip the mixture into the biscuit base and smooth flat. Cover with aluminium foil, making a few holes in the foil. Bake in the oven for 50-60 minutes.

Leave to cool completely before removing from the tin. Cut into slices and serve.
