1 ⅘ kilograms mussels
1 finely chopped onion
2 bay leaves
8 thyme
15 grams butter
100 milliliters dry white wine
2 Tbsps Whipped cream
25 grams coarsely chopped parsley

Preparation steps

1.

Rinse the mussels under cold water and remove beards. Discard any open mussels.

Heat the butter in a skillet set over medium heat. Add the onion, bay leaf and thyme, and cook for 1 minute.

3.

Add the mussels and white wine to the skillet. Cover with a clean tea towel or lid, and cook until all the mussels are open, about 4-5 minutes. Discard any mussels that remain closed.

4.

Stir in the cream and parsley. Divide the mussels between 4 soup plates and serve immediately. Serve with crusty white bread if desired.
