- 1 red paprika
- 3 scallions
- 800 grams mussels
- 300 milliliters dry white wine
- 30 grams grated ginger
- 200 grams soybean sprout
- 100 grams Pod
- 6 Tbsps soy sauce
- parsley (for garnishing)

Preparation steps

Rinse and peel the carrots and cut into thin slices. Rinse the red bell pepper, remove seeds and membrane and dice. Cut the scallions into rings. In cold water, rinse and scrub the mussels, discarding any with open shells. Place the white wine in a saucepan, add the mussels and ginger and stir.

Add the bean sprouts, carrots, bell peppers and scallions to the mussels, cover and simmer for 10-12 minutes. Place the mussels in bowls and serve. Season with soy sauce and garnish with parsley leaves.
