5 White rolls (day-old)
250 milliliters milk
1 onion
60 grams Smoked bacon
400 grams Chanterelle
3 Tbsps butter
3 eggs
2 Tbsps freshly chopped Chervil
salt

100 grams grated Cheese (such as Bergkäse)

Preparation steps

Butter casserole pan.

Cut bread rolls into thin slices, set aside some slices and place the rest into a bowl. Pour milk over bread and let stand briefly.

Peel onion and chop finely. Cut bacon into small cubes. Clean chanterelle and leave whole or halve, depending on size.  Heat 2 tablespoons of butter in a pan and saute onion for a few minutes. Add mushrooms and saute for a few minutes or until all liquid has evaporated. Add bread. Separate eggs and whisk egg yolks with chervil, add to the pan. Season with salt, pepper and nutmeg and mix well. Remove from heat.

Beat egg whites until stiff and fold into the mixture, add cheese. Spread mixture in the pan and spread with remaining bread slices. Cover with remaining butter cut into small pieces and bake in preheated oven at 180°C (approximately 350°F) for about 30 minutes or until golden brown. Remove from the oven and serve.
