- 1 cup good-quality Dark chocolate (70% cocoa solids, chopped)
- ⅞ cup butter
- 1 ⅓ cups soft brown sugar
- 1 cup self-rising flour
- ⅓ cup cocoa powder
- 3 eggs (beaten)
- ½ cup dried Cranberry
- ¾ cup white chocolate (cut into chunks)

Preparation steps
1.
Hear the oven to 180ºC (160º fan) 350ºF, gas mark 4. Grease and line a 20cm x 25cm/8" x 10" baking tin.
2.
Melt the dark chocolate and butter in a bowl set over a pan of barely simmering water. Mix the sugar, flour and cocoa powder in a large bowl and pour in the melted chocolate and butter mixture. Add the beaten eggs, stir well then fold in the cranberries and white chocolate.
3.
Pour the mixture into the prepared baking tin and bake for 25 - 30 minutes or until the mixture is springy to the touch.
4.
Carefully transfer to a wire rack and let cool before cutting into 12 pieces.
