1 head Oak leaf lettuce
½ head Lollo rossa
1 red Bell pepper
1 green Bell pepper
1 yellow Bell pepper
1 Fennel bulb
2 stalks Celery
2 Beefsteak tomato
2 sprigs Basil
2 sprigs Dill
2 sprigs Salad burnet
1 sprig marjoram
3 Tbsps White vinegar
5 Tbsps olive oil
salt
freshly ground peppers
2 Anchovy fillet
1 bunch Cress

Preparation steps

Tear lettuce into bite-size pieces, rinse thoroughly and spin dry. Cut bell peppers in half, remove seeds and ribs, rinse, pat dry and cut into thin rings or strips. Rinse fennel, pat dry, cut into quarters, remove hard stalk and cut into fine strips. Rinse celery, trim and cut into thin slices. Rinse tomatoes and cut into eight pieces.

Rinse herbs, shake dry and chop finely. Mix oil in a bowl with vinegar, stir and season with salt and pepper. Rinse anchovy fillets under water, chop very finely and mix into dressing. In a large bowl, combine lettuce, cress, prepared vegetables and herbs, pour dressing over top and mix well before serving. Serve in bowls.
