- For the salad
- 1 head Radicchio
- 1 bunch Arugula
- 200 grams Cherry tomatoes
- 1 pc Parmesan (150 grams)
- For the marinade
- 4 Tbsps olive oil
- 3 Tbsps balsamic vinegar
- 2 Tbsps water
- 2 pinches sugar
- salt
- freshly ground peppers
- 1 garlic clove
- fresh Basil (to taste)

Preparation steps
1.
For the salad, remove stalks from radicchio, rinse and cut into thin strips. Rinse arugula, remove stalks and chop into half. Rinse tomatoes, cut in half and remove stem. Mix all salad ingredients in four bowls.
2.
For the marinade, mix oil in a bowl with vinegar, water and spices. Peel garlic, chop finely and add to the bowl. Finely chop basil and add to the bowl as desired. Drizzle marinade over salad. Let rest briefly.
3.
Grate Parmesan, sprinkle on salads and serve.
