Preparation steps

1.

Rinse the lamb, chicken and turkey and pat dry.

In a bowl, whisk together 2 tablespoons olive oil, the lemon slices and sage, add the lamb turning to coat, cover and refrigerate 2 hours.

Place the turkey between 2 sheets of waxed paper and with the flat side of a meat mallet or the bottom of a pan, pound the turkey to flatten. Peel and finely chop the garlic and shallots. Rinse and finely chop the parsley and mix with shallots and garlic.

Whisk in 2 tablespoons olive oil and season with salt and pepper. Spread the shallot mixture over the turkey and roll the cutlets up, thread on skewers.

Peel and quarter the red onions, season with salt and pepper and drizzle with a little oil.

Cut the chicken breasts into bite-size cubes. Rinse and trim the scallions, cut the root end into 8 cm (approximately 3-inch) long pieces, set the rest aside for another use. Thread the chicken and scallions onto skewers. Sprinkle with salt, pepper and olive oil.

Heat the grill to medium and lightly oil the grates. Place the lamb, red onions, turkey and chicken breast skewers on the grill the meat turning everything as it cooks until lightly browned, 6-8 minutes. Season with salt and pepper and serve.
