- 2 ⅓ cups instant Couscous
- 3 Tomatoes
- 1 large Red onion
- 2 cloves garlic cloves
- 1 cup sheep cheese
- ½ tsp ground cilantro
- 6 Tbsps olive oil
- 3 Tbsps white wine vinegar
- salt
- freshly ground peppers
- 1 Tbsp Pistachio (chopped)
- 2 Tbsps Peanuts (shelled)
- ½ bunch mint (leaves, finely chopped)
- mint (to garnish)

Preparation steps
1.
Pour 400 ml boiling, salted water over the couscous and leave to stand for 5-10 minutes. Fluff the couscous with a fork.
2.
Wash, quarter, deseed and dice the tomatoes.
3.
Peel the onion and halve and slice lengthwise.
4.
Peel and finely chop the garlic.
5.
Dice the sheep's cheese.
6.
Mix the vinegar with the coriander, salt and pepper, whisk in the oil and season to taste. Mix the tomatoes, garlic and onion with the dressing and then mix with the couscous. Add the sheep's cheese, mint, pistachios and peanuts, stir in carefully and check the seasoning. Serve garnished with mint leaves.
