- 5 cups fresh mint
- 1 ½ cups Cider vinegar
- 3 Tbsps lemon juice
- ¼ cup Mint liqueur
- 2 ¾ cups sugar

Preparation steps
1.
Peel and finely chop the shallot.
2.
Discard any damaged mint leaves. Rinse. Reserve 1/3 of the leaves.
3.
Combine the other 2/3rds of the mint leaves with the shallot and 125 ml/1/2 cup boiling water. Allow to steep for approximately 15 minutes.
4.
Chop the reserved mint leaves and put them in the prepared jars.
5.
Strain the onion-mint "tea" through a sieve. Bring the strained liquid, vinegar, lemon juice and sugar to a boil. Bring to a rolling boil and cook for 40 minutes, stirring occasionally.
6.
Remove the pot from the heat and stir in the mint liqueur.
7.
Immediately fill the jars with the hot liquid. Close tightly and turn upside down until cooled slightly. After approximately 10 minutes, turn the jars upright and cool to room temperature.
