- For the meringue
- 6 egg whites
- 1 ⅓ cups sugar
- 1 tsp Vinegar
- 1 tsp vanilla extract
- 4 tsps Corn starch
- In addition
- 4 cups mixed Berry (i. e. strawberries, raspberries, redcurrants)
- powdered sugar (for dusting)
- For the cream
- 1 ⅓ cups cream
- ⅞ cup Mascarpone
- 5 Tbsps powdered sugar
- 2 packets cream of tartar

Preparation steps

Preheat the oven to 140°C | 275F | gas 1.

Line a baking sheet with parchment paper. Draw two circles (22 cm diameter) on top.

Beat the egg whites on the highest mixer setting until stiff. Add 4 tbsp of water and continue to beat. Continue beating while gradually adding the sugar. Reduce the speed and continue beating while adding the vinegar, vanilla extract and cornstarch one at a time. Divide the mixture between the two circles, placing it loosely on top. Bake for 40-50 minutes in the preheated oven.

In the meantime, wash sort, clean and drain the berries.

Beat the cream with the mascarpone, confectioner's sugar and stiffener until creamy.

Remove the Pavlova from the oven. Allow to cool. Spread with the cream. Cover with berries and place one layer on top of the other.
7.
Place the dessert on a cake stand and serve sprinkled with confectioner's sugar.
