3 Tbsps Caper
3 Anchovy fillet
1 garlic clove
100 grams black Olives
8 Tbsps olive oil
lemons (juiced)
1 Tbsp Cognac
1 tsp Mustard

1 sprig oregano
1 sprig rosemary

Preparation steps

Cook the potatoes in boiling water for about 25 minutes. Drain, peel and let cool. Rinse and slice the tomatoes. Peel the onions and cut into fine strips. Rinse the anchovies. Puree the anchovies, capers, olive oil and lemon juice. Season the caper sauce with cognac, mustard, salt and pepper.

Slice the potatoes and place in a bowl with the tomato slices. Pluck the leaves from the herbs and chop. Spread the onions and olives on the potatoes. Drizzle with the caper sauce. Serve sprinkled with herbs.
