150 grams Basmati rice
salt
3 large Bell pepper (red, green and yellow)
1 onion
4 Tbsps olive oil
250 grams pureed Tomatoes
1 stale White roll
1 egg
½ dried thyme
400 grams mixed Ground meat
freshly ground peppers
1 Tbsp chopped fresh parsley

Preparation steps

1.

Rinse the rice in a sieve and bring to a boil with about 300 ml (approximately 1 1/4 cups) of salted water. Cover and simmer over low heat for about 20 minutes until done.

Rinse the peppers, cut in half, trim and cut into pieces. Peel the onion and finely chop. Sauté for 2-3 minutes with the pepper in 2 tablespoons hot oil. Add the tomatoes and simmer gently for about 10 minutes.

Soak the bread in a little lukewarm water. Squeeze well and tear into small pieces. Mix with the egg and thyme and knead into the meat. Season with salt and pepper and shape into small balls. Saute in the rest of the hot oil in a nonstick pan about 6 minutes until browned.

Mix the rice into the sauce and season with salt and pepper. Transfer to plates, place the meatballs on top and serve sprinkled with parsley.
