When preparing mayonnaise, it is important that all the ingredients are at room temperature. Whisk the egg yolks vigorously with salt, mustard and 1 tablespoon lemon juice. Add a few drops of oil while whisking or beating with a hand mixer, then slowly add the remaining oil in a thin stream, just until the mixture becomes a thick, creamy mayonnaise and the egg yolk is emulsified. Stir in the lemon zest, turmeric and remaining lemon juice and season with salt and pepper.

Spoon the mayonnaise into a bowl and garnish with some chopped parsley.
