- 3 medium-sized Zucchini
- 50 grams raisins
- 2 garlic cloves (finely chopped)
- 1 pc ginger (fresh; 4 cm, grated)
- ½ tsp ground Turmeric
- 2 Tbsps almonds (chopped, roasted, peeled)
- Walnut oil
- sugar
- salt
- 1 tsp lemon juice
- fresh parsley

Preparation steps

Rinse, trim and halve zucchini lengthwise. Cut into thick slices. Soak raisins in boiling water about 20 minutes, then drain well. Bring a large pot of water to a boil. Add zucchini and blanch about 1 minute. Drain.

In a bowl, mix together 2 tablespoons oil, garlic, ginger, turmeric, raisins, and almonds. Add zucchini, mix well and season with sugar, salt, and lemon juice. Serve garnished with fresh parsley. Sprinkle with a chopped chile, if desired.
