4 Star anise
1 Vanilla bean (quartered)
1 Tbsp Juniper berries
1 tsp white peppercorns
1 tsp allspice
1 Tbsp Mustard seed

Preparation steps

Preheat the oven to 130°C (approximately 265°F). Fill a deep baking pan 1 cm (approximately 1/2 inch) full of warm water, and place on the lowest shelf in the oven.

Heat 750 ml (approximately 25 ounces) of water with the vinegar, salt, and sugar. Rinse the cucumber and pat dry. Pierce several times with a fork, then halve lengthwise. Peel and halve the onions, then thinly slice.

Rinse the peppers. Layer the peppers, onions, cucumbers, and spices in the jars. Pour the hot cooking liquid over the cucumbers and seal tightly. Place in the baking tray, and cook for 20 minutes. The cooking time begins when bubbles begin to form in the liquid. Remove from the oven and store in a cool, dark place.
